Fregola is a delicious and unique Sardinian pasta made from hard durum wheat flour.  It is rolled, sun-dried, and then toasted to a gold & brown mix of shades.  Similar in size to Israeli Couscous, it's rough exterior encourages sauces to stick and provide flavor to every bite.
